Summer Red Gazpacho
What you need:
3 large roma tomatoes halved and cored
1.5 lbs fresh watermelon
1 small cucumber, peeled and seeded
1 medium green pepper, cored
½ small red onion, peeled
2 small garlic cloves, peeled
3 tablespoons of avocado oil
2 tablespoons of apple vinegar
1 teaspoon fine sea salt
½ teaspoon cracked black pepper
½ teaspoon of ground cumin
1/3 cup packed fresh mint leaves
1 thick slice of gluten free bread
Don’t knock gazpacho until you try it! It’s cool 😎
Method:
Chop up your ingredients + add to large bowl
Blend with immersion blender
Puree the soup, chill in fridge and serve
Can garnish with flaked almonds and a dollop of coconut yoghurt.
