Summer Red Gazpacho

 

What you need:

  • 3 large roma tomatoes halved and cored

  • 1.5 lbs fresh watermelon

  • 1 small cucumber, peeled and seeded

  • 1 medium green pepper, cored

  • ½ small red onion, peeled

  • 2 small garlic cloves, peeled

  • 3 tablespoons of avocado oil

  • 2 tablespoons of apple vinegar

  • 1 teaspoon fine sea salt

  • ½ teaspoon cracked black pepper

  • ½ teaspoon of ground cumin

  • 1/3 cup packed fresh mint leaves

  • 1 thick slice of gluten free bread

 
 

Don’t knock gazpacho until you try it! It’s cool 😎

Method:

  1. Chop up your ingredients + add to large bowl

  2. Blend with immersion blender

  3. Puree the soup, chill in fridge and serve

  4. Can garnish with flaked almonds and a dollop of coconut yoghurt.

  5. Enjoy this refreshing soup!
