Chicken Skewers

What you need:

  • 4 chicken breasts, cubed

  • ½ cup brown sugar

  • ½ cup amino acids

  • ¼ cup pineapple juice

  • 2 garlic cloves minced

  • 2 cups pineapple, cubed

  • 1 tbsp arrowroot

  • 1 red bell pepper

  • 1 yellow bell pepper

  • 1 green bell pepper

  • 1/2 tsp pepper

  • 1/2 tsp salt

  • 1 red onion

 
 

Pair with my Cauliflower Potato Salad!

Method:

  1. In a small saucepan, whisk the brown sugar, amino acids, pineapple juice, garlic, pepper+ salt.

  2. In a small bowl, whisk together the water + Arrowroot. Slowly whisk into the mixture.

  3. Bring to boil + boil for 1-3 minutes until the mixture just starts to thicken.

  4. Remove from heat and keep ¼ cup of the sauce for later.

  5. Marinate the chicken in the sauce in the fridge for 30 minutes. Thread the chicken on skewers along

    with the cubed peppers, red onion, and pineapple.

  6. Grill for 8-10 minutes until the meat is done Remove from the grill and baste with reserved sauce.
