Cauliflower “Potato” Salad
What you need:
Salad
1 head of cauliflower
4 hard boiled eggs
¼ cup apple cider vinegar
1 tsp paprika
½ cup homemade mayo
2 tbsp fresh dill, chopped
2 cloves of garlic
1 red onion
3 tbsp of parsley
1 tsp sea salt
Homemade Mayonnaise
1 egg yolk
1 cup olive oil or avocado oil
4 tsps lemon juice
pinch of salt
pinch of paprika
Potato Salad - without the potato!
Method:
Homemade Mayonnaise
Whisk together egg yolk, lemon juice, salt and paprika until well combined.
Continue whisking while slowly adding in oil.
Continue to whisk until well blended.
Alternatively, use a food processor to blend all ingredients.
Salad
Place eggs in a pot for 25 minutes and bring to a boil.
Chop the cauliflower into bite sited pieces and transfer them to a large pot and bring to a full boil.
Bring Boil 10-12 minutes, or until cauliflower is tender.
Strain and allow to cool. Add remaining ingredients and stir to combine
Best if put in refrigerator overnight.
