Cauliflower “Potato” Salad

What you need:

Salad

  • 1 head of cauliflower

  • 4 hard boiled eggs

  • ¼ cup apple cider vinegar

  • 1 tsp paprika

  • ½ cup homemade mayo

  • 2 tbsp fresh dill, chopped

  • 2 cloves of garlic

  • 1 red onion

  • 3 tbsp of parsley

  • 1 tsp sea salt

    Homemade Mayonnaise

  • 1 egg yolk

  • 1 cup olive oil or avocado oil

  • 4 tsps lemon juice

  • pinch of salt

  • pinch of paprika

 
 

Potato Salad - without the potato!

Method:

Homemade Mayonnaise

  1. Whisk together egg yolk, lemon juice, salt and paprika until well combined.

  2. Continue whisking while slowly adding in oil.

  3. Continue to whisk until well blended.

  4. Alternatively, use a food processor to blend all ingredients.

Salad

  1. Place eggs in a pot for 25 minutes and bring to a boil.

  2. Chop the cauliflower into bite sited pieces and transfer them to a large pot and bring to a full boil.

  3. Bring Boil 10-12 minutes, or until cauliflower is tender.

  4. Strain and allow to cool. Add remaining ingredients and stir to combine

  5. Best if put in refrigerator overnight.
