Herbed Almonds
Method:
Mince the garlic, measure the herbs + mix all of the butter ingredients together.
In a large skillet, melt the herbed garlic butter over medium heat until butter starts to bubble.
Toss in the almonds and sprinkle with sea salt.
Cook for 8-10 minutes (or until almonds begin to darken and smell wonderful), stirring often with wooden spoon.
In another dish mix the chopped basil with pasta sauce, spread 1/2 cup of the sauce on bottom of baking dish. Arrange half of eggplant slices over the sauce.
Spread out on baking sheet after, to make sure butter is spread evenly and to allow them to dry.
Almonds go well on a platter with rye crackers and remaining herbed butter.
